I enjoyed your stories about Canadian fly-in fishing. I've done it a few times myself. And while I agree that pike is delightful, I'd steer everyone to walleye, the tastiest fish that swims. I've fixed it a number of ways, but the topper was Walleye Vera Cruz: batter-fried fillets topped with a sauce of onions, tomatoes and olives. I would have included a teaspoon of adobo sauce from a tin of chipotle peppers, but the can disappeared from the cabin one day while we were fishing. I've always wondered what the thief thought when he, she or it took that first bite.
