Easter/Passover Treats: Colorful Cream Cheese PuffsAs I was driving up the mountain from Denver the other day, I noticed a shining break in the clouds the higher up I drove. It had been windy and trying to rain or snow all day, but not much moisture fell from the clouds. Just before the clouds began to disperse, allowing the sun to shine through, I had been thinking of all the things I had to get done this coming week. I can never understand why around holidays, the routine chores, office work, daily employment, children assignments and activities all seem to grow and intensify in priority. I was also thinking of some very quick, scrumptious and colorful treats to prepare for the coming Holidays Easter and Passover and the week that many celebrate the warming season and the cherished time of fertility and the new life. The Crumb of the CoffeecakeOver the past week or so, it has been snowy and cold in Colorado, giving me with the ideal opportunity to play around with new recipes. For many years around this time of year, friends and customers begin putting in their orders for Easter Sunday Brunch often requesting homemade coffeecakes to be shared with loved ones. I received one of these calls a couple days ago, requesting a recipe for a Crumb Cake just like the ones she used to eat at her Grandmother's growing up on the East Coast. I know this customer well, she refuses to purchase prepackaged baked goods, saying that they are not the same as homemade, only easy to open and cut but dull in taste. She gave me a mission that needed to be fulfilled, so I began to play mixing this and that for I tried to come up with a perfect Crumb Cake for years.

Homemade Oat Rolls for St. Patrick’s DayHold on everybody, according to the calendar Spring is almost here, just a few more days to go. The buds are growing on the trees; the grass is slowly turning green and there is a longing to plant fresh fruits, vegetables and flowers among many of us. Sure we can go to a supermarket and purchase these items, but the use of such in foods is just not quite the same as when growing and using your own. However, the taste is often quite similar, when you really think about it. A peach tastes like a peach, a zucchini bought from the produce department, tastes just like a zucchini grown out back and a potato is still a potato, whether homegrown or not. But the grains that produce the finest breads and the fiber our bodies' needs is not easily grown in a back yard, that is unless you are a farmer. (Bless you, if you are.) Therefore, I have chosen to supply you with my recipe for Oatmeal Cinnamon Rolls, developed in time for celebrating St. Patrick’s Day and for warming my home during these last chilly days of winter. You see, store bought fruits and vegetables really do taste just like the ones we plant, but homemade bread, that fills your home with the aroma of love and goodness, always taste better than when it is bought at the supermarket. Warm Up the End of Winter with Peach MuffinsThe warmer season is coming, the sun is bright, the air is warming, the weeds are just beginning to turn green and the longing for summer is rapidly approaching. Unfortunately way up here in the Rocky Mountains, winter is not yet over, and many cold days are still to come. The fields are still brown in view; the trees are just beginning to develop their small buds of life and the snow continues to fall. Many have asked me how to add a bit of summer’s glow into a home during these last days of winter doldrums. My answer to this is rather simple; bring home some flowers, put them in the wiondow and make some homemade baked goods full of summer fruits. Then your home will be filled with a floral, fruity fragrance and shine with the glow of warmer months to come.
One of my favorite treats to bake during these last frigid days of the winter months, is Peach Muffins.
